Microwave Peanut Brittle - Aunt Doris’

 

Tip: The trick to making thin, tender peanut brittle is to keep the baking sheet(s) you use warm. Heat them in oven to around 200E° before you spread the peanut brittle mix. This should allow you to spread the mix 1-2 cm. thick without it setting up.

1 cup raw peanuts

1 cup sugar

½½ cup white corn syrup

1/8 teaspoon salt

1 tablespoon butter, pre-measured

1 teaspoon soda, pre-measured

1 teaspoon vanilla, pre-measured

 

Method:

Mix the peanuts, sugar, corn syrup and salt together in a microwave-safe 1 ½½ quart casserole or 4 cup glass measuring dish.

Cook in microwave on high for 4 minutes; open and stir the mixture

well (*Note); then cook on high for another 4 minutes.

*Note: If using nuts other than raw peanuts, coconut, or other non-melting additives, stir in after first 4 minutes of cooking.

Open, stir in the pre-measured butter and vanilla, then microwave on high for 2 minutes.

Finally, remove from the microwave, add the pre-measured baking soda and stir quickly until the mix is light and foamy.

Immediately pour the mixture onto a lightly-greased baking sheet, spread it out thinly.

Allow the mix to cool; then break it into small pieces adnd store in an airtight container.
