Peach Spice Cake

Ingredients
1 can peaches (#2.5 size)
2/3 cup shortening
1.5 cups sugar
2 1/3 cup flour
3 t. baking powder
1 tsp. baking soda
1 tsp. salt
2 tsp ginger spice
1 tsp cloves
3 beaten eggs

Directions

Drain and mash peaches.  Cream shortening, add sugar and mix well.  Add mashed peaches, beaten eggs and dry indredients and beat well.  Turn into a (greased and floured) tube pan.  Bake at 375 degrees 45 minutes.

This is good plain, with a powered sugar glaze or a cream cheese icing.

 

Peach Spice Bread Pudding

Ingredients
3 eggs
1 cup milk
1/4 tsp. salt
1/2 tsp. vanilla
1/2 tsp. nutmeg (optional)
1 tsp. cinnamon
1/2 cup raisins (optional)
2-3 cups Peach Spice cake pieces

Directions

Heavily butter baking dish.  Deep sides works best for me, but it can be any shape.  Beat all ingredients, except raisins and cake.  Fold cake and raisins into liquid mix, and pour into baking dish.  Bake at 350 degrees for  30 minutes, or until top is golden brown and center is cooked.
